Our menu is a variety of traditional Italian dishes as well as a contemporary take on some old favorites. I love to experiment and develop new recipes and variations as well, and will offer many lower fat dishes using fresh vegetables and lean meats and beans. To take advantage of the freshest ingredients, our menu will change weekly as well as with the seasons, based on what is available fresh. I am always guided by three principles when it comes to cooking food….make it FRESH, HEALTHFUL, and DELICIOUS.

FRESH – There is no substitute for fresh ingredients. Period. All of the meat, poultry, and produce I use to prepare your food are delivered to me fresh, and I have carefully selected suppliers who share my passion for freshness.

Healthful - Vital to this is the use of fresh ingredients. However, starting with fresh, healthful ingredients isn’t enough. It’s important that preparation and processing not destroy the nutrition that these good foods pack. For example, I will never:

 

  • Deep Fry. I will not have a deep fryer in my kitchen!
  • Add artificial preservatives or ingredients to any of my dishes.
  • Sweeten my red sauces with sugar. Instead, fresh vegetables will provide a natural sweetness.

Delicious – I incorporate fresh ingredients and healthful cooking methods in recipes that I’ve carefully chosen or developed for you. I think you’ll find the results to be delicious.

I’ve been blessed to have been raised around wonderful cooks who instilled a passion for good food in me. It’s my joy and privilege to be able to share that with you.
